2006 Chardonnay
A healthy crop coupled with moderate weather leading to harvest gave us a longer than usual growing season in 2006. This increased hang-time translated into a ripe yet well balanced 2006 Chardonnay. The wine was 90% barrel fermented, left on the lees and aged for 9 months in mostly neutral French, Hungarian and American oak barrels. The lees were stirred every two weeks in order to encourage a richness in the mouth. We allowed only 15% of the blend to go through malolactic fermentation so the wine retains its natural bright fruit flavors. This estate Chardonnay is fruit forward and very food friendly. Aromas of crisp Bosc pear, Red Delicious apples, citrus blossom and lemon zest intermingle with the modestly restrained bouquet notes of toasted oak, vanilla, nutmeg and hints of clove. On the palate, fruit reflecting the nose abounds with the additional suggestion of stone fruit. A full round mouth-feel and balanced acidity ensure successful food and wine pairing across a range of cuisine, especially grilled fish or grilled chicken topped with our Tomatillo Sauce.
