2005 Pinot Noir 'Reserve' A “reserve” wine must achieve the highest standards to warrant the extra care and attention that is necessary in the winery. The wine will begin with the best fruit available from our Anderson Valley vineyards, special attention is given during fermentation, and the wine is carefully paired with French oak barrels for the extended aging process. The result, as the 2005 vintage demonstrates, is well worth the extra effort. Once the fruit was crushed and de-stemmed, we allowed the fermentation process to begin with naturally occurring or “native” yeasts. The fermenting wine was pressed from the solids and transferred to barrel for 15 months of aging in 50% new French oak. The wine is the embodiment of classic Pinot Noir. Dominated by notes of sweet cherry, strawberry, and subtle spice, the aromas are both broad and deep. The palate echoes the aromas, building to a rich mid-palate, and a lingering finish of cherry and spice. The fruit is nicely balanced with the acidity and tannins, making this wine equally enjoyable with or without food.
