Roasted Zucchini Spread

Serve with Husch 2008 Sauvignon Blanc.

8 Medium Zucchini
2 Large cloves of finely chopped fresh garlic
3 Tablespoons of finely chopped fresh mint leaves
2 Tablespoons of fresh lemon juice
¼ cup of extra virgin olive oil
½ Dried red chili stemmed and crushed into tiny pieces
Salt & Pepper to taste

Brush zucchini lightly with olive oil and lightly roast on an outdoor grill. After grilling chop zucchini into ½ inch pieces and place in a saucepan. Combine the remainder of the ingredients with the zucchini and let simmer for five minutes on medium heat. Stir with a wooden spoon mashing some of the larger zucchini pieces. Add desired amount of salt and pepper.

This spread can be served warm or cold. Great with pita bread pieces!
